Regions of Italy Series: Calabria - Thursday October 15, 2026
Join us for a fun interactive class to learn how to make authentic Calabrian dishes.
Where: Cucina Mauro Kitchen Cafe, 76 Densley Avenue, Unit 3 (facing Sheffield St on east side of building), Toronto (near Keele St and Lawrence Ave)
When: Thursday October 15, 2026, 6:30 p.m. - 9:00 p.m.
What: Hands-On Cooking Class
Cost: $95 per person (plus HST)
This class will focus on the cuisine of Italy’s most southern region: Calabria. Calabrian cuisine is known for its rustic character and emphasis on spicy heat, pork, and cured meats. We will start the class by learning how to make a traditional sugo alla Calabrese, a tomato sauce, slow-cooked with pork ribs and sausage. While the sauce simmers, you will learn how to hand-make one of Calabria’s most traditional pasta shapes: fileja. This unique pasta is made by hand rolling strands of pasta with a wooden or metal needle, giving it a distinctive twisted shape. Once done, we will cook the fileja and toss them with our sugo to enjoy as the first course of a traditional Calabrian meal, followed by the meats that braised in the sauce, served with Calabria’s most famous contorno (side dish), Pipi e Patate (potatoes fried with sweet peppers).
We will greet you with light antipasti to tide you over until dinner is served.
